I found myself in quite the predicament this past weekend. I really really wanted something delicious and bad for me for breakfast, as in a donut, bagel, waffles, or anything that isn't cereal. The flip side is that I have been having some of the most amazing workouts lately, that I did not want to ruin my health kick with a donut. So i thought to myself, what do I do? I recently posted about breakfast foods for dinner and decided to quickly come up with a recipe before I got too hangry. I was inspired by key ingredients from a few different recipes to come up with what I found to be simple, fast and easy. Here is my recipe for gluten-free healthy pancakes! |
Ingredients 3 eggs 1 tbs honey 1 tsp vanilla 1/4 tsp salt 1 1/2 cup almond flour 1 tsp baking soda Coconut oil (for cooking in the pan) | 1. Mix together eggs, vanilla and honey in a bowl. 2. Add almond flour, baking soda and salt. 3. Combine until there is a smooth consistency. 4. Heat a bit of coconut oil in the pan 5. Cook each side of the pancake until they are brown. 6. Top with powdered sugar, fruit, syrup etc. 7. Enjoy! |
